"Well, you see that she's a wolf, and a spirit one at that." Gabriel has looked closely at Willow's wolf to know that it was beyond a spirit wolf. He had been opportiuned to see a spirit wolf before, but Willow's wolf looked different and so big.
They needed to gain the Voss family's trust again, else they would be cast aside. It's enough that his daughter has already made him a fool in front of everyone today.
